Chicken Avocado


Chicken Avocado 
This is not only a really tasty recipe its also very easy to make!
Ingredients: 3 Skinless Chicken Breasts
3 Eggs
Mayo
2 Avocados
Paprika 

How to make: 
1. Take a regular sized pan and fill it halfway or less with water
2. Season the chicken breasts how you like it (garlic powder, paprika, rosemary, etc.)
3. Place chicken in water along with 3 Eggs.
4. Cook for about 20- 30 min
5. Take eggs out- place in measuring cup or bowl filled with water and ice
6. Slice chicken into thin strips
7. Peel Eggs
8. Cut eggs in half throw away hard yolk
9. Chop up eggs and place in bowl with chicken
10. Cut Avocados and place in bowl
11. Mix in Mayo and garnish with paprika
12. WOOLAH! Your Done! Enjoy :]

B B Kings

If anyone lives in Memphis Tennessee, there is an Amazing- and I mean amazing restaurant called B B Kings. If you haven't tried it, you need to! A few weekends ago we ate there and it was absolutely delicious. I recommend the Rack of Ribs - the meat falls right off the bones and it has that "perfect" smoked flavor. Also the Catfish - soo tasty, they give you two fillets and they are perfectly crusted (not too much crust but the right amount. I hope this helps if your in town! - A&A

Pan Fried Pork Chops

I love home cooking and this is the type of food my family likes to eats. Greens aren't for everyone, especially my son but I bet everyone in the family would eat greens made the way my hubby makes them - that recipe will be coming up in another post. 

If anyone is interested in knowing  my recipe for these veggies just let me know. I can tell you that there weren't any leftovers! 

All you need is 40 minutes from start to finish for everything if you're pretty good at multi-tasking and are hungry. Enjoy!



1) Rinse off pork chops. 
2) Marinate in olive oil, fresh garlic, paprika, seasoning salt, and rice vinegar. 
3) Pan Fry in olive oil (I like using a cast iron skillet).
* Note: Cooking time varies depending on the cut and thickness - pork must be cooked to 160°F. 
Rinse and Marinate
Marinate with white wine vinegar.
Rub: seasoning salt, chopped garlic, paprika,

Sweet Bread Recipe

"Autumn and I just tried out this recipe. The recipe yields three deliciously sweet loaves. Before the loaves could cool a loaf disappeared! For breakfast we sliced and toasted some and spread strawberry and cherry preserves on top - our whole family enjoyed it. "

Preparation Time: 90 minutes
Bake Time: 25 - 30 minutes
                  
Ingredients:
      5 cups bread flour
      3 1/2 cups whole wheat flour
      3 cups warm water
      3 Tbsp. butter, melted
      1/3 cup honey
      2 packages of active dry yeast
      2 Tbsp. butter, melted
      1/3 cup honey
Directions: 
  1. Mix warm water yeast, and 1/3 cup of honey, then add 5 cups of white bread flour, and stir until blended well.  (Let stand for approximately 30 minutes or until big and bubbly.)
  2. Mix 3 Tbsp. of melted butter, 1/3 cup of honey, and salt. Stir in 2 cups of whole wheat flour. Knead the flour on a flat surface using whole wheat flour. (Cover and let stand in a warm place until doubled - cover light)
  3. Punch down and divide up into 3 loaves. Place dough greased loaf pans (9x5), let rise.
  4. Bake at 350 degrees F for approximately 25 - 30 minutes. 
  5. After baking - brush loaf tops with melted butter to keep crust moist and soft.

Cumin Chicken & Roasted Tomatoes

Preparation Time: 15 minutes
Cooking Time: 60 minutes -- 1 hour 15 minutes
Served with smashed potatoes smothered in tomatoes, onion, and garlic excess from the baking dish of cumin chicken.


Preheat Oven: 350 degrees F
Ingredients: 1 Whole Chicken (cut-up), 1/2 sweet Vidalia onion (chopped), paprika, garlic powder, seasoning salt, cumin, olive oil, 14.5 oz diced tomatoes w/ basil, garlic & oregano (drained).




Autumn and I used a whole chicken fryer already cut up to save time - rinse thoroughly and place in a baking dish. Cover the chicken in paprika, shake on garlic powder, some seasoning salt, and lightly sprinkle cumin. Next, lightly pour olive oil over the chicken (4-6 tablespoons) and rub in the spices to thoroughly cover the chicken on all sides. Pour the tomatoes over the chicken. Lastly, include the 1/2 cup of chopped sweet onion.

TASTE VARIES...Everyone likes different amounts of salt and garlic so use discretion. Remember, you don't need a lot of cumin - a little goes a long way. When done the chicken should be browned on the top and the tomatoes should be nicely roasted along with the onions. (Timing varies depending on your oven)
Done and ready to eat!

PARFAITS!


Preparation Time: 10-15 minutes


Ingredients: Granola, Fruit, Yogurt 
With parfaits anything goes - there’s no special order or amount required just have fun with it! 

Hint: Granola is best eaten fresh - and it is especially delicious when it's toasted!
My daughter and I love eating desserts and we especially like desserts that no only taste yummy but doesn’t add inched to our tummies! Autumn uses soy yogurt and prefers not to use mango. I opted for regular vanilla yogurt, blueberries, strawberries, and mango! Moms and dads can have a lot of fun  making these with the kids! Not only will they have fun making this “healthy treat” they’ll enjoy eating them especially when they made it themselves!!
